I've been Away and I'll be Away

Hello my followers, I am so sorry that I have been disappeared. Many things has been going on from my last post. I had to rush back to my country, because my father had hospitalized. Then he passed away unexpectedly. I have been stuck in my country, Myanmar with my mom, my sister and my dad's business. Everything has different from then. I came back to Thailand 3 weeks ago to see my husband, then I will be going back to Yangon, Myanmar again in few days to help managing my dad's business with my mom and sister. I will come back to Bangkok in 2 months time.

I have been wanted to post new blog post whenever I try to cook new meals and stuffs. But I have really been busy with my family and all. I am so sorry for not keeping in touch with you guys through this blog. And worst of all, I could not access blogger from my country, it is banned over there. It sucks.

I apologize you all that I will be away for awhile again. I will come back after things has been settled and when I can access. Thank you so much for all you guys wishes and love. I will post all those meals posts as soon as I can.

Stir-Fried Chicken Cocktail

I love the taste of this dish. I love the simplicity of this dish. I love the taste of this dish. Most of all, it is one of the healthy meals.

Ingredients - 4 Chicken breasts, 1 green bell pepper, 1 red bell pepper, some basil leaves, 1 medium size onion, 4 cloves of garlic, a pinch of salt, 1 tea spoon of seasoning powder.

How to cook;

1. Add 3 tea spoon of cooking oil in a pan and heat the oil, then add chopped garlic and chopped onion to stir fry until they are soft and cooked.

2. Add bite size cut chicken after first stage. Add a pinch of salt and a tea spoon of seasoning powder and stir-fry them until chicken is cooked.

3. After chicken is cooked, add cut bell peppers and fry them for 5 mins.

4. After bell peppers are soft and semi-cooked, top with basil leaves and stir all the ingredients together for 3 mins more. You will notice the aroma of basil leaves and bell peppers, and see the beautiful colors and will taste the simply delicious dish afterward.

Egg Plants With Sweet Chillies

Ingredients - 3 green egg plants, 4 big red chillies, onion, soy sauce, and celery


How to cook;

Pour little amount of oil in the pan. Heat the oil, when the oil is hot, add chopped onions and stir-fry until it is soft and cooked, then add chopped big sweet chillies and fry them for awhile, then add egg plants and 3 table spoons of soy sauce. (I use Kikkoman less salt soy sauce as below.) Minute later, add the chopped celery and cook the egg plants until it turns soft and cooked.

You will get very simple vegetarian egg plant dish. I was inspired to cook this dish from a guest chief from Masterchief Season 2 show. It is very simple, smells delicious and tastes delicious too. :)




Note - Before i cook the dish, I cut the egg plants in bite size. Then I mixed them with some salt for 30 minutes to let the salt soaks the bitterness from the eggplants. Then I washed them well with water again to prepare to cook.

Baked Potatoes and Chicken Breast

This is one of the dinner meal I did last week and it was very yummy. The baking is nothing special, the most important thing is to mix the chopped chicken breast in the sweet seasoning for few hours before you start baking.

All you need is 4 pieces of chicken breast, 2 big potatoes, salt, black pepper, some seasoning powder and very little oil to brush the baking pan.

I chopped the chicken breasts and mixed them in salt, black pepper and seasoning for 5-6 hrs and let them sit in the fridge in the plastic box.

Then when I wanted to bake, I took it out and let them lay in the non-stick baking pan with 2 big potatoes. I make small holes on the potatoes with a folk to get bake well inside too. Don't forget to wash the potatoes skin well before that.

I baked them for 30-40mins until they turn golden color. Then I got the yummy and very smelling good baked chicken and baked potatoes for dinner. :)

Pork Stew With Basil

Very easy meal, all you need is some pork flesh ( I use pork shoulder ), sweet basil leaves, ginger, onion, some cooking oil, salt, black pepper and seasoning powder.

Heat the oil, when the oil is hot, fry the ginger and onions till soft and cooked, then add chopped pork, stir them in salt, seasoning powder and black pepper powder until pork is well cooked. When the pork is cooked, top the sweet basil leaves and stir-fry them for few mins.

Just an easy and quick dish you can create in your busy and rush days. The pork makes the meal to be sweet and basil leaves make the good smell for the dish.

Me The Novice To Bake

So, I got one more non-stick baking tray while it is on sale and muffin tray to try baking some muffins as first time in my life.

I got them from Robinson department store from here in Bangkok. The non-stick baking tray is on 50% sale + my 5% member card, so I got it with just around 2.5$ U.S.D or 79 Baht. The muffin tray is non-stick also, it is about 7$ +, which is 230 Baht. With my 5% discount card, I got it with about -1$ less..I think...I was happy and feel like that was a steal!

I have been using my 1st baking tray which is exactly like the one form picture for awhile and like it so much.
